homemade granola bars

INGREDIENTS

      DRY INGREDIENTS

3c rolled oats

1c oat flour (or blended rolled oats)

1c unsweetened, shredded coconut 

4tsp ground cinnamon 

1tsp salt

1c raisins 

1c walnuts

WET INGREDIENTS

1/2c melted coconut oil

1c natural unsalted peanut butter (or nut butter of choice)

2/3c maple syrup 

4 tsp pure vanilla extract

4 flax eggs (4 tbsp ground flaxseed + 12 tbsp warm water - let sit for 15 minutes)

DIRECTIONS

mix wet + dry ingredients separately first, then combine all together. once combined, line a baking sheet with parchment paper + pour mixture into pan ~3/4in thick + freeze for 10-20 minutes. after, proceed to cut bars into preferred size and bake at 350 for 15 minutes.

note: recipe can be no bake! simply refrigerate + then cut into preferred size to enjoy.
